Calloumi and Quinoa Salad

Ingridients
- 1 cup quinoa
- 2 cups water
- 8 ounces calloumi, diced
- 1 avocado, diced
- 1 small cucumber, diced
- 1 small red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa in a fine-mesh strainer and transfer to a medium pot.
- Add the water and bring to a boil over high heat.
- Reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed.
- In a large bowl, combine the cooked quinoa, calloumi, avocado, cucumber, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to coat. Serve at room temperature or chilled.
