- 8 ounces calloumi, grated
- 1/4 cup all-purpose flour
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh mint
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, lightly beaten
- 2 tablespoons olive oil, for frying
Instructions
- In a large bowl, combine the grated calloumi, flour, parsley, mint, cumin, cayenne pepper, salt, and black pepper.
- Add the beaten egg and stir until well combined.
- Heat the olive oil in a large nonstick skillet over medium heat.
- Using a tablespoon or cookie scoop, drop the calloumi mixture into the hot oil and flatten slightly.
- Cook for 2-3 minutes per side, or until golden brown and crisp.
- Serve hot with your favorite dipping sauce.
