Calloumi and Vegetable Stir-Fry

Ingridients
- 8 ounces calloumi, sliced
- 2 tablespoons vegetable oil
- 1 small onion, sliced
- 2 garlic cloves, minced
- 1 red bell pepper, seeded and sliced
- 1 small zucchini, sliced
- 1 small yellow squash, sliced
- 1/2 cup snow peas
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes
Instructions
- Heat the vegetable oil in a large wok or skillet over high heat.
- Add the calloumi and stir-fry for 2-3 minutes, or until lightly browned. Remove from the wok and set aside.
- Add the onion and garlic to the wok and stir-fry for 1-2 minutes, or until softened.
- Add the bell pepper, zucchini, yellow squash, and snow peas. Stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
- In a small bowl, whisk together the soy sauce, honey, grated ginger, and red pepper flakes.
- Return the calloumi to the wok and add the sauce. Stir-fry for 1-2 minutes, or until the sauce is heated through and the calloumi and vegetables are coated.
- Serve hot with rice or noodles, if desired.
